Chicken Casserole

Chicken potato and carrot baked in oven

Ingredients

  •  3 Chicken breast with bone
  • 1 Onion
  • 1 Carrot
  •  1 Potato
  •  ½ Green bell pepper
  •  1 Teaspoon black pepper corns
  •  ¼ Teaspoon coriander seeds
  •  1 Teaspoon leaf masala
  •  2 Teaspoons chicken spice
  •  2 Bayleafs
  • Pinch of Salt

Method

  •  Fry chopped onion, green pepper,bayleafs,coriander and pepper corns.
  •  Add cut up chicken  sliced carrots until chicken is sealed all around.
  •  Add the carrots, masala and chicken spice and fry stirring until spices change color.
  •  Add the potatoes and cook slowly with 1 cup of water.
  •  Cook only until done about 20 min.
  •  Don't cook to long otherwise Chicken  will be dry and tough.
  •  Put every thing in oven proof dish and cover with lid.
  •  Bake in pre heated oven at 180 degrees for about 30 min.
  •  Serve with rice and your choice of vegetables.
