Bacon and eggs

Bacon and Eggs with a difference. Use for picnic or just as something different.

Ingredients

  • some bacon rashers (smoked, cured or non-smoked)
  • large eggs
  • Salt and pepper to taste

Method

  • cook the bacon in a saucepan till just cooked. Don’t overdo it.
  • line a muffin baking tray with the cooked bacon, cut a bit for the bottom as well
  • break an egg into each bacon lined “muffin hole”
  • add salt and pepper to taste
  • bake in oven at 180ºc for 7-12 minutes or till th egg is set according to your taste
  • remove from tray and serve
