Coconut biscuits

Biscuits with coconut and glaced cherries

Ingredients

  •  250 g Butter
  •  250 g Sugar
  • 250 g Coconut
  •  2 Eggs
  •  350 g Cake flour
  •  50 g Red glaced cherries
  • 5 g Baking powder

Method

  • Cream Butter and sugar well.
  •  Add the coconut.
  • Add the cake flour and the baking powder.
  •  Cut and add the cherries.
  • Add the eggs and mix to a soft dough. Don't over mix.
  •  Press small amounts of dough on a floured surface to about 4 mm thick and cut with cookie cutter as desired.
  • Bake till light brown at 175oc for 20 – 25 minutes.

Make about 100 Biscuits
