Pasta with vegetables

Ingredients

  • 1 Onion
  • 1 Aubergine
  •  1 Red sweet pepper
  •  8 Pettipans
  •  4 Baby marrows
  •  1 Tin chopped Italian tomatoes (400 g)
  •   ¼ Teaspoon  black pepper corns
  •  ¼ Teaspoon coriander seeds
  •  2 Bay leafs
  •  2 Teaspoons BBQ spice
  •  ¼ Teaspoon cumin
  • Pinch of Salt

Method

  •  Cook pasta of your choice to directions on packet.
  •  Fry the chopped onion with bay leafs. pepper corns and coriander seeds.
  •  Add the spices and fry until it change color.
  •  Add the Italian tomatoes and one cup of water.
  •  Cut the vegetables in chunks and add to pot.
  •  Cover with lid and cook vegetables soft to your desire.
  •  The sauce should be thick and not much if sauce is a lot reduce by cooking the sauce.
  •  Mix pasta with the veg and sauce.

 Vegetables enough for 4 people add pasta for 4 people.
