Vegetarian cottage pie

Vegetarian cottage pie with lentils

Ingredients

  • 1 Cup Brown lentils
  • 1 Onion
  •  35 ml Tomato paste
  •  3 teaspoons BBQ spice
  •  1 teaspoon mild yellow curry
  •  30 ml corn flour
  • Pinch of Salt
  •  400 g garden peas

Method

  •  Cook the lentils until soft and set aside.
  •  Fry the chopped onion until onion start to turn brown.
  •  Add the spice and fry until spices change color.
  •  Add one cup of water and tomato paste and cook for 10 minutes.
  •  Mix the corn flour with a bit of cold water.
  • Thicken the sauce with the corn flour.
  •  Add the peas and lentils and simmer for 2 minutes.
  • Pour into 25 x 25 x 5 cm oven poof dish.
  •  Spread mashed potatoes on top.
  • Bake till light brown at 200oc.

 Potatoes need to be 1/3 and lentils 2/3  i use 4 potatoes see recipe for mashed potatoes

Serve 6
