Roasted Vegetables in Butternut

Butternut filled with roasted veg

Ingredients

  •  1 Red bell pepper
  • 1 Red onion
  • 1 Cup Flour
  •  4 Baby marrows
  • 5 Button mushrooms 
  • Salt
  •  Crushed dried red chilly
  •  1 Butternut

Method

  •  Cut all vegetables roughly except the Butternut.
  •  Cut butternut in halve and pre boil with water until just soft.
  •  Sprinkle vegetables with Olive oil.
  •  Season with Salt and crushed read chilly to taste.
  •  Bake at 200ºc in pre heated oven.
  • Bake until soft ± 30 minutes.
  •  Scoop roasted vegetables into butternut.
  •  Roast another 15 minutes.

This will ensure butternut to be taste and not bland.

Serve hot as Vegetables or with roasted potato wedges on the side.

Serve 2 large portions.
