Ingredients

  •  180 g fresh dates
  • 130 ml Luke warm Water
  •  62 g Butter
  • 135 g Brown Sugar
  •  15 g Instant coffee
  • 4 Eggs
  • 100 g Cake Flour
  •  3 g Bicarbonate of soda
  •  30 g Digestive bran

Method

  •  Cut dates in pieces and remove pits.
  •  Add the water and set aside to stand.
  • Pre heat oven to 180ºc.
  •  Put butter, Sugar, Coffee, Cake flour, Bicarbonate of soda and Digestive bran in bowl and rub in the butter.
  •  Add the beaten eggs.
  • Add the dates and water.
  •  Mix all ingredient well together.
  • Pour into 12 x 18 cm greased and dusted loaf pan.
  • Bake at 180oc for 75 minutes minutes
  •  Remove from pan while hot.
  • Serve hot with custard as a desert or serve as a tea cake when cold.

Makes 1 loaf.
