Red Lentil Soup

Ingredients

  •  1 Onion
  • 1 Cup Red lentils
  •  2 tsp Tomato paste
  •  1 tin Coconut milk ( 400 ml)
  • Crushed red chilli (to taste)
  • Salt (to taste)
  •  36 Basio Tomatoes or cherry tomatoes
  • 30 g Rocket

Method

  •  Fry the chopped onion until light brown.
  • Add the lentil and 4 cups of water.
  •  Cover pot and cook until lentils are soft about 15 minutes.
  •  Using a stick blender make lentils fine.
  • Add tomato paste, coconut milk and 1 cup of water and bring to boil.
  •  Add chilly and salt to taste and remove from heat.
  • Cut tomatoes in halve and fry in heavy sauce pan in a bit of olive oil.
  • Fry tomatoes cut side on pan until brown and remove from heat.
  • Chop rocket fine and add to soup just before serving but don't cook again.
  •  Dish in bowl and serve hot.

Place 6 halves of roasted tomatoes in each serving of soup before serving.

Make 6 Portions.
